This simple veggie chow mein makes the perfect week night meal when you top it with your favorite protein! I like to add a fried over medium egg or grilled shrimp to mine. It’s also a great meal to make when you’re cleaning out the fridge because you can use whatever veggies you have on hand, and the rest of the ingredients are pantry staples.

Ingredients

Units Scale

For the sauce:

  • 1/2 cup soy sauce or tamari
  • 2 tbsp toasted sesame oil
  • 2 tbsp maple syrup
  • 12 tbsp siracha (depending on desired heat)
  • 2 tsp rice vinegar

Separate from the sauce, make a corn starch slurry with:

  • 2 tbsp water
  • 1 tbsp corn starch

For the chow mein:

  • 1 tbsp avocado oil or vegetable oil
  • 16 oz fine egg noodles / chow mein noodles
  • 2 cloves of garlic, minced
  • 1 bundle or 57 green onions sliced, use the bottom white part for the stir fry and the top green for garnish
  • 1/2 red pepper diced
  • 1/2 of a cabbage roughly chopped
  • 3/4 cup julienned carrots
  • 1/2 cup sliced celery
  • Veggies of choice* (optional)
  • Toasted sesame seeds for garnish (optional)

Instructions

PREP

  1. Chop all veggies according to ingredients
  2. Boil your egg noodles according to package directions, drain and rinse with cold water and set aside
  3. Whisk together all sauce ingredients
  4. Whisk together corn starch slurry
  5. Toast sesame seeds in a frying pan over medium heat, stirring until brown and fragrant, 2-3 minutes

STIR FRY

  1. Add oil to a wok over medium-high heat
  2. To the oil, add the whites of your green onion followed by the garlic. Cook 1-2 minutes until the garlic starts to golden
  3. Add the rest of your veggies and stir-fry until softened to your liking, 4-6 minutes
  4. Add in the cooked egg noodles, followed by your sauce
  5. Allow the noodles to soak up some of the sauce (1-2 minutes), then stir in your cornstarch slurry
  6. Cook for another 2-3 minutes
  7. Optionally, garnish with toasted sesame seeds, the green part of your green onions and your favorite protein
  8. Enjoy!

Notes

You can use any veggies you like for this dish. Good additions are broccoli and bok choy!

This makes a pretty large batch and could easily serve 4-6 people. The leftovers are delicious! Just add a splash of soy sauce to bring it back to life.
