This Dairy-Free Pistachio Ice Cream Recipe comes together in just four ingredients and is eggless which also means it’s vegan!

Ingredients

Units Scale
  • 1 16oz carton of Elmhurst Oat Creamer in Pistachio Crème Flavor
  • 1/3 cup Cane Sugar
  • 1 tsp Vanilla Extract
  • 1/4 tsp salt
  • Optional: 1/4 cup chopped pistachios

Instructions

  1. Combine your creamer, sugar, vanilla and salt in a mixing bowl
  2. Whisk until all of the sugar is completely dissolved, about 2-3 minutes
  3. Pour into your ice cream make and mix on low for 20 minutes
  4. Once nice and creamy, fold in your pistachios if adding 
  5. Enjoy soft serve or spread into a loaf pan and put in the freezer for a minimum of 3 hours or overnight for a scoop-able ice cream
