These peach and cherry crostinis make the perfect summer appetizer and are a great way to use your summer peaches!

Ingredients

Units Scale
  • 1 baguette
  • 2 large peaches
  • 1520 dark cherries
  • 8 basil leaves
  • 23 tbsps olive oil, plus some for drizzling on the baguette
  • 1 tsp honey
  • Salt and Pepper to taste
  • 1/4 cup freshly grated parmesan (optional)
  • balsamic glaze for drizzling

Instructions

  1. Dice your peaches and cherries in to similar sized pieces and put into a mixing bowl
  2. In a separate bowl, whisk together olive oil, honey and salt and pepper 
  3. Pour on top of peaches and cherries and stir to combine
  4. Stack your basil leaves on top of each other and then roll and slice. Add 3/4 of the sliced basil to your mixture and reserve the rest for garnish 
  5. Fold in your parmesan and basil
  6. Let the peach and cherry mixture rest in the fridge while you prepare the baguette or until ready to serve
  7. For the crostini, set the oven to 350º F
  8. Slice your baguette into thin, even slices
  9. Lay the slices on a sheet pan and drizzle the tops with olive oil 
  10. Bake in the oven for 10-12 minutes until crisp 
  11. Allow to cool slightly, then top the crostinis with your peach and cherry mixture
  12. Garnish with basil and a drizzle of balsamic glaze
  13. Enjoy!

Notes

I put 15-20 black cherries because peaches are the star of the show here! If your peaches are on the smaller side you may need less cherries. Same with the olive oil! You don’t want the mixture to be swimming in liquid, just nicely coated.
