I’m the kind of girl who always needs something sweet after she eats. These Toasted Coconut Chocolate Covered Cherries are the perfect after dinner treat that allow me to indulge without making me feel guilty. It’s a win-win! Healthy dessert? Sign me up!

These are so easy to make. They are a great everyday snack, but they also look super cute on a dessert board like this one from my wine tasting night!

How To Make Toasted Coconut Chocolate Covered Cherries

I know, I know, you can hardly call this a recipe. But, they’re so poppable and good, I had to share here on the blog.

Just four ingredients; that’s all it take to make this sweet treat. I love dark cherries in the summertime. They’re delicious and sweet all on their own, but add dark chocolate and toasted coconut, and they go from good to great!

For the coconut shreds, I like to use unsweetened coconut shreds because I find they toast up better. These are *almost* as good without toasting, but I like the little crunch it adds and extra depth of coconut flavor. 

Wash + Toast

All you have to do to makes these is wash and dry your fresh, dark cherries. Next, toast your coconut shreds over low heat in a dry skillet. Keep stirring and moving around the coconut until it’s nice and brown. Keep an eye on this, once they start to brown, they’ll get dark quick!

Melt + Dip

Then, melt dark chocolate with a little coconut oil. Microwave in 10-15 second intervals, stirring in between, until it’s completely melted. Dip your cherries in the chocolate, then in the coconut shreds and allow chocolate to harden. Voila! It’s that easy.

Make sure to remind people that these are fresh cherries, so they have pits! Optionally, you could remove the pits, but I find the stem makes it easier to dip and eat.
