I’m the kind of girl who always needs something sweet after she eats. These Toasted Coconut Chocolate Covered Cherries are the perfect after dinner treat that allow me to indulge without making me feel guilty. It’s a win-win! Healthy dessert? Sign me up!

These are also so easy to put together. They make for a sweet snack, but they also look super cute on a dessert board like this one from my wine tasting night!

How to Make Toasted Coconut Chocolate Covered Cherries

Just four ingredients; that’s all it take to make this pop-able treat. I love dark cherries in the summertime. They’re delicious and sweet all on their own, but add dark chocolate and toasted coconut, and they go from delicious to wow!

For the coconut shreds, I like to use unsweetened coconut shreds because I find they toast up better, but if you prefer a little sweeter dessert, then get the sweetened shreds! These are *almost* as good without toasting, but I like the little crunch it adds and extra depth of coconut flavor. 

All you have to do to makes these is wash and dry your cherries, melt dark chocolate with a little coconut oil, toast up your coconut shreds, dip in the chocolate, then in the coconut shreds and allow chocolate to harden. Voila! It’s that easy.

Toasted Coconut Chocolate Covered Cherries

A deliciously pop-able, healthy dessert perfect for an after dinner snack!

Ingredients

  • Dark Cherries
  • Dark Chocolate
  • Coconut Oil
  • Coconut Shreds

Instructions

  1. Wash and dry your cherries. Be sure they are dry or your chocolate won’t stick as well!
  2. Melt dark chocolate with a tablespoon of coconut oil 
  3. Toast your coconut shreds on a skillet over medium heat
  4. Dip the cherries in the dark chocolate followed by the toasted coconut
  5. Allow to cool and harden on parchment paper and enjoy!

Notes

I like to use unsweetened coconut shreds because I find they toast up better, but if you prefer a little sweeter dessert, then get the sweetened shreds!
