Football season is right around the corner, and this Veggie Chorizo Queso dip makes a great game day appetizer. Whether you’re cheering on the Kansas City Chiefs like my husband and I, my alma mater the University of Missouri, or some other team, this board is sure to bring fans together. Even opposing fans will agree this queso is the best appetizer for watching football!

One of the fun things about fall is eating yummy food with friends while football plays on the TV. Add this veggie chorizo queso dip to a tortilla chips and dip board, and you’ll get invited to every football watch party to come this season. Don’t say I didn’t warn you!

What you Need for the Veggie Chorizo Queso Dip

I use a whole bag of the Morning Star Veggie Chorizo Crumbles for this recipe. This is not sponsored, it’s just the easiest to find and it tastes good! The boys don’t even realize it’s vegetarian. Not that I’m trying to trick them, but if I were, it would work (ha!).

Next, you need your favorite queso dip from the grocery store. I always get the 16 oz El Terrifico Tamale Co. White Cheese Dip. You are going to use about a cup and a half in the chorizo dip. I like to serve the leftover queso as an extra dip option. Especially when I make a tortilla chips and dip grazing board like the one I show below the recipe.

You will also need 4 oz of shredded mozzarella and 4 oz of shredded monterey jack cheese, plus extra for grating over the top of the dip. Four ingredients, that’s it! That’s all you need to make the perfect appetizer for watching football.

I love to serve it with a variety of chips (our favorite are Old Florida Tortilla Chips) and mini flour tortillas. Adding it to a little tortilla is my favorite way to eat it! I buy the super soft street taco size.

How to Make Veggie Chorizo Queso Dip

This recipe is so simple! You’re basically taking grocery store queso dip up a notch with yummy veggie chorizo crumbles and extra cheese. To make this easy appetizer recipe, combine all of your ingredients in a cast iron skillet over medium heat starting with the veggie chorizo.

Then add your cheese dip, and stir in your shredded cheese until everything is melted. Top with a little extra shredded cheese and serve!

Ingredients

Units Scale
  • One 10 oz bag of Morning Star Farms Veggie Chorizo Crumbles
  • ~12 oz of your favorite grocery store queso (I used El Terrifico Tamale Co. White Cheese Dip)
  • 4 oz shredded mozzarella, plus extra for topping
  • 4 oz shredded monterey jack, plus extra for topping
  • Tortilla chips and mini flour tortillas
  • Read notes

Instructions

  1. Heat a cast iron skillet over medium heat
  2. Add your veggie chorizo and cook until warmed through and no longer frozen ~5-10 minutes
  3. Pour in your queso dip and stir
  4. Once the queso is melted, add in your shredded cheese
  5. Cook until everything is nicely melted together
  6. Top with extra shredded cheese
  7. Serve with tortilla chips and mini flour tortillas
  8. Enjoy!

Notes

This recipe can be customized to your liking! Use your favorite veggie chorizo and grocery store queso dip. If you like less chorizo, use half the bag instead of the whole bag. Use 10-16 oz of queso dip. I’ve done it all, and it always turns out delish!

Also, I like to shred the mozzarella and monterey jack cheeses myself, so I buy the 8oz cheese blocks. That way, I have plenty to shred on top too.

I love to serve it with a variety of chips (our favorite are Old Florida Tortilla Chips) and mini flour tortillas. Adding it to a little tortilla is my favorite way to eat it! I buy the super soft street taco size.

I just use the leftover queso from making my veggie chorizo queso dip on this board. Then, I cheat and buy the chunky guac. Add a squeeze of fresh lime juice and a little cilantro on top, and people will think it’s homemade ;). For the salsa, I love the mango one from Old Florida alongside their original tortilla chips; talk about YUM!

This is seriously the easiest appetizer for watching football, hanging out with friends or bringing to a party. It’s definitely a crowd pleaser. Let me know if you try it! I love to read your comments.
