I love a good, indulgent breakfast. Breakfast is honestly my favorite meal of the day. I do try to stick to healthier options during the week. However, for me it’s all about balance and this Maple Cream Cheese and Strawberry Stuffed Brioche French Toast makes for the perfect Saturday morning breakfast or brunch. I enjoy every single bite. It’s seriously so good!

What You Need

This recipe starts with a good brioche loaf. We love the brioche from Trader Joe’s, or we like to pick up one from our local bakery. You can also make your own. I’d recommend this recipe from Preppy Kitchen.

The batter I use for this Stuffed Brioche French Toast is super simple. All you need are eggs, your choice of milk and vanilla extract. I typically have unsweetened vanilla almond milk in the house, so that’s what I use in this recipe.

For cooking, I like to use our cast iron griddle stove top, but you can use an electric griddle or even just a pan. I will say, it is nice being able to cook all the slices of french toast at the same time though so they stay hot!

The maple cream cheese filling is easy too! It’s simply cream cheese that has been warmed in the microwave for a few seconds, so it’s easier to spread, mixed with bit of real maple syrup. You want to use the good stuff here, not pancake syrup which is basically just sugar. You don’t need to add a lot of extra sweetness to this recipe since brioche is already such a sweet bread. That’s why I don’t add any extra sugar (besides the natural sugar in maple syrup) to the cream cheese spread or the french toast batter.

Then, all that’s left to do it slice your strawberries and layer your french toast! I like to use an egg slicer like this to cut my strawberries. My mom sliced strawberries like that when I was growing up, and it makes the perfect slices for layering!

Lay a slice of the french toast on a plate, spread with your cream cheese mixture, top with strawberries and another slice of french toast. Top your stack with more strawberries, powdered sugar and a drizzle of maple syrup. Enjoy!

Maple Cream Cheese And Strawberry Stuffed Brioche French Toast

This Maple Cream Cheese and Strawberry Stuffed Brioche French Toast is the perfect Saturday morning breakfast recipe! The recipe below serves 2, so if you are serving more, be sure to hit the multiplier on the right to double or triple this recipe.

Ingredients

  • 4 Slices of Brioche Bread
  • 1 Egg
  • 1/3 cup milk (I use almond)
  • 1 tsp vanilla extract
  • Butter for your pan or griddle
  • 1/4 cup cream cheese
  • 1 tbsp maple syrup, plus more for over top
  • 45 strawberries
  • Powder sugar for dusting

Instructions

  1. Turn on your griddle or heat your pan over medium low heat.
  2. In a shallow bowl wide enough for your bread, whisk together the egg, milk and vanilla extract.
  3. Coat your griddle or pan in butter.
  4. Dip your first slice of brioche in the egg mixture. Leave for a few seconds and then flip over so the other side gets coated. Lay on griddle or pan and repeat for remaining slices of bread.
  5. While those are cooking, heat your cream cheese in the microwave for about 10 seconds to soften. Stir in maple syrup.
  6. Check on french toast. Once golden, about 4-7 mins, flip each slice. Allow to cook for a few more minutes or until golden brown on both sides.
  7. Slice your strawberries.
  8. Layer your french toast starting with one slice, followed by half your cream cheese mixture. Cover with sliced strawberries. Add your second slice of bread.
  9. Top with more strawberries, a dusting of powdered sugar and a drizzle of maple syrup.
  10. Repeat for other serving.
  11. Enjoy!
